Tri-colured Popsicles: Independence Day Special

Popsicles are an interesting way of providing a good mix of protein and fat to your family for energy and to keep them satiated.

Ingredients

  • 3 cup yoghurt
  • 1/3 cup coconut milk or any type of milk
  • 2 cups chopped mango
  • 2 kiwi fruit, cut into 10 slices

Instructions

  • Whisk yogurt and milk together in a bowl.
  • Puree the mango in a food processor or blender until smooth.
  • Place one slice of kiwi in each popsicle mold. Spoon the mango puree and the yogurt mixture into the molds, alternating them to create layers. Continue until you reach the top of the popsicle molds.
  • Place the popsicle sticks into the molds, cover, and freeze for a few hours or overnight until solid. Note: if you don’t have popsicle molds, you can use small paper cups.
  • To unmold, dip the popsicle molds in warm water and then pull the popsicles out.

Enjoy with family and friends as a dessert or mid-day meal.

Mango chia seed pudding


Ingredients

  • 1 cup. unsweetened coconut milk
  • 1 cup. mango puree
  • 1/2 cup. chia seeds


Directions

  • Quickly pulse mango puree in a food processor or blender, to remove any chunks or stringiness. This makes for a more attractive pudding.
  • Stir together mango puree and coconut milk in a medium-sized mixing bowl.
  • Add chia seeds and combine thoroughly.
  • Cover and chill for 3-4 hours, stirring occasionally.

Banana Chia Pudding Recipe


Ingredients:

  • 250ml milk of choice
  • 2 tbsp chia seeds
  • 2 tsp natural honey
  • ¼ tsp ground cinnamon
  • ½ tsp vanilla extract
  • 1 medium banana, peeled and halved
  • Cacao nibs, to serve

Directions

  1. Place the milk, chia seeds, honey, cinnamon and vanilla extract in a small bowl and mix until well combined.
  2. Cover with plastic film and place in the refrigerator for 4 hours or overnight to chill. Before serving, place one half of the banana in a small bowl and mash with a fork until smooth.
  3. Add the mashed banana to the chia pudding and mix until well combined. Slice the remaining banana into thin slices.
  4. To serve, spoon the chia pudding mixture into two small glasses or jars. Top with the sliced banana and cacao nibs. Enjoy!

Kiwi Chia Pudding

Ingredients

  • 3 tbsp chia seeds
  • 1 cup almond milk
  • 1 tbsp maple syrup (or honey)
  • 1 tsp pure vanilla extract
  • 1 cup kiwi, diced
  • 1 tbsp coconut flakes
  • Berries to top

Directions

  • In a medium bowl, combine the chia seeds and almond milk together. Stir very well to avoid any chunks.
  • Add the maple syrup and vanilla extract. Mix everything very well. Cover the bowl and refrigerate for about 4-5 hours.
  • When the chia pudding is ready to be served, puree the kiwi in a food processor.
  • Mix the pureed kiwi and chia pudding together. In small glasses (or dessert dishes), pour the chia pudding and top the pudding with coconut flakes and berries.
