Quinoa Chocolate Bars
Ingredient
- 1 cup quinoa, soaked overnight, drained, and patted
- 1 cup dark chocolate
- 1 tablespoon coconut oil
Instructions:
1. Toast the quinoa in a pan for about 10-12 minutes, or until lightly golden and crispy.
2. While the quinoa is toasting, melt the chocolate chips and coconut oil in a microwave-safe bowl, heating in 30-second increments.
3. Once the quinoa is toasted, fold it into the melted chocolate mixture until evenly combined.
4. Pour the mixture into a parchment-lined baking dish, spreading it evenly. Sprinkle with sea salt, if desired.
5. Chill the bars in the freezer for about 1 hour, or until firm. Once set, cut the chocolate quinoa bars into squares.
6. Store the bars in an airtight container in the freezer.
Pista Paneer Dip
Ingredients:
- 1/4 cup Pista
- 1 green chilli
- 3-4 garlic cloves
- 100 gm of Paneer
- 3 tbsp hung curd
- A bunch of coriander leaves
- salt to taste
Instructions
- Grind everything
- Take the dip out on a serving plate, and spread evenly.
- Add some sev on top & add some chopped Pista & some pomegranate.
- Serve this dip with a choice of crackers
Sweet Potato Discs
- Air fry 2 big-size sweet potato discs
- In a pan brush a few drops of oil and roast sweet potatoes on both sides, till you get a golden color.
- Sprinkle some salt and pepper
- For the spread – hung curd, salt, pepper, and lemon juice.
- For the topping: take roasted 10-12 walnuts, 1/4 cup of Cranberries, and some fresh coriander leaves. Chop and mix everything
- And then make the snack with sweet potato as a base, flavorful spread & crunchy walnut cranberry topping
Low Fat Cheese Spread with Crostini
To make a low-fat spread
- Take 150 gm paneer in a mixer jar/food processor
- Add 3 tbsp hung curd
- Add Salt & a few drops of lime juice
- Grind it on a pulse
- Low fat spread is ready
- If it’s too thick, you may add a few spoons of paneer water or curd water
To Make Crostini
- In a pan, heat some olive oil
- Add chopped garlic
- And add cherry tomatoes
- Sprinkle some salt & black pepper
- Toss everything on a high flame just for 5 minutes
- Turn off the flame
- Now on toasted bread, apply a low-fat spread
- And the above-cooked tomatoes on the top
- Sprinkle some chili flakes
- Crostini is ready; perfect party starter
