Mother’s Day Recipes by Tanya Bhatia
1. Lobia Sprouts Salad
Ingredients
- 1/2 cup sprouts
- 1 cup boiled lobia or black-eyed beans
- 1 cucumber, chopped
- 1 onion, chopped
- 4-5 cherry tomatoes, chopped
- 1-2 green chillies, chopped
- 1 lemon juice
- 1/2 tsp salt
- 1/4 tsp cumin powder
- 1/4 tsp red chilli powder
- Garnish with some basil leaves.
Instructions:
- Take boiled lobia and add in all the veggies. Add the spices and lemon juice. Mix well.
- Garnish with some basil leaves.
2. Makhana Bhel
Ingredients
- 1 cup Makhana
- 1 onion, chopped
- 1 tomato, chopped
- 1 boiled potato, chopped
- 2 tbsp green chutney
- 1 tbsp methi chutney
- 1/4 tsp rock salt
- 1/4 tsp red chilli powder
- 1/4 tsp chaat masala
- 1/2 lemon juice
- Sev/Bhujia
Instructions:
- Take 1 cup of roasted Makhana and add in the veggies. Then add in the green and meethi chutney and mix well. Add the spices and lemon juice.
- Garnish with sev and chopped coriander leaves.
3. Mango Mastaani
Ingredients
- 2 mangoes
- 3-4 tablespoons sugar
- 2 cups milk, chilled
- mango, cubes
- 1 tbsp Chopped nuts
- 1 tbsp tutti frutti
- 2 scoops Vanilla ice cream
Instructions
- Firstly, in a blender take 2 mango.
- add sugar and 2 cups of milk.
- blend into a thick milkshake. keep aside.
- for assembling, in a tall glass take 2 tbsp mango cubes.
- add 2 tbsp chopped nuts and 2 tbsp tutti frutti.
- also, add 1 scoop of ice cream.
- pour in the prepared mango milkshake.
- top with 1 scoop of vanilla ice cream, nuts, and tutti frutti.
- Finally, enjoy mango mastani immediately.
4. Tiramisu Overnight Oats
Ingredients:
- 1/2 cup oats
- 1/2 cup milk
- Shot of coffee
- 1 tbsp honey, optional
- A layer of yogurt: 1/2 cup Greek yogurt
- 2 tbsp melted chocolate.
Instruction:
1. In a small container, combine the oats, protein powder, coffee, and milk of choice milk. Mix well to combine.
2. Layer the oats with the yogurt.
3. Refrigerate overnight (or a minimum of 4 hours).
4. The next day, take the oats out.
5. Dust with cocoa powder or melted chocolate and enjoy!
5. Rose Thandai
Ingredients:
• 2 Cups Vanilla Ice Cream
• 2 tbsp Rose Syrup
• 1 tbsp Gulkand
• 3 tbsp Thandai Powder
• 1 tbsp Chopped Pistachios (for garnishing)
• 1 tbsp dried rose petals
Instructions:
- Blend 1.5 cup vanilla ice cream with Gulkand, rose syrup, and Thandai powder.
- Transfer to serving glasses, add a scoop of vanilla ice cream, and garnish with pistachios & rose petals.
